The 5.5 quart size was the size I was looking for things like chili, stews, soups, etc. I needed to buy new because I moved to a home with an induction cooktop. This is an expensive investment but after all the research (Reddit was the best source) I wanted guaranteed reliability and longevity. I measured my old large pot and this one correlated close. I personally think the largest size, the 8.9 would be too big for my daily use. So far so good! The pan is labeled as non stick but I didn’t know how true that would be given that it’s made of metal. However, it’s maiden use was cooking a ton of peppers and onions down for fajitas. I did use some oil but not as much as I expected to need to. It worked great! Clean up was a breeze. As for other reviewers saying that the handles remained cool to touch, that was not my experience and I definitely needed hot pads to maneuver. Being that they’re also metal, that was not my expectation that they would remain cool but I thought I would clarify given other comments. We went with the big one, the 12.5” and ours holds up to 6L per the dash marks. Only disadvantage is that it doesn’t come with a lid. For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10-Inch Fry Pan is the perfect pan. Featuring a 10’’ size for added versatility, this pan is made of carbon steel, an alloy that is a combination of iron and carbon. The “Blue” in “Blue carbon steel” references a heat treatment process to help resist rust and corrosion, a nuisance that can plague traditional cast iron pans. Stay-cool cast iron handles securely attach to the pans with heavy duty rivets for confidence in construction and a lifetime of use. Though cast iron also excels as maintaining even heating, it can take time to rise to temperature and since iron itself is so brittle, more of the material must be used to make it durable, making traditional cast iron pans larger and heavier. With blue carbon steel, you’ll have a pan that is noticeably lighter without sacrificing performance.
