This flatware is designed for commercial use, heavy 18/8 stainless steel. Handling instructions: Do not soak in water with other metal objects. Carefully clean after use. Wash in hot water with non-abrasive non-corrosive cleaning agent. Rinse in water of at least 180 degrees. A wetting agent or water softener may be required if using water with high mineral content. Avoid prolonged contact with acid substances (ex. lemon/vinegar) Avoid using cleaning solutions containing ammonia or lemon. Avoid using any form of chlorine bleach which will discolor stainless steel. Dry immediately.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. This is a beautifully crafted knife. The blade is beautiful and made with the devotion that Japanese craftsmen are famous for. The wooden handle is a lovely dark brown and fits nicely in my hand. This is more than a kitchen knife, it is a piece of art and deserves special care. No dishwasher, dry immediately after use and store such that it won't nick you or be nicked by other cutlery..
