I love my Nanobond 3.5qt essential pan; it cooks like a dream. That said, I think even this size pan would’ve benefited from a helper handle. I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. I wanted a non-stick griddle that would be good for eggs or pancakes. I know these types of teflon non-stick pans are being fazed out for ceramic non-stick. We really like our new fry pan. It is the nicest non-stick fry pan we have ever owned. We can cook long pieces of bacon along with eggs and potatoes at the same time.
