I cannot believe this is not Teflon! I emailed viking and they told me this is 99 titanium a tiny amount of silicone oxide on the cooking surface. I tried frying egg with a teaspoon of avocado oil, the egg slid smoothly as if Teflon. Then I tried with no oil at all. It did not slide freely but with help of a silicone turner the egg still released flawlessly. (See the 2 photos I attached). I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool.
