Sugar Cookie Bites
To start off, make your favorite sugar cookie recipe and bake it in a bar pan or as rounded cookies. Let cookies cool completely and then crumble into a large bowl. Now you'll make the frosting. You can use your own recipe or the one below. Your frosting will need to be just a bit thicker than you'd typically use.
Frosting
4-5 cups powdered sugar
3/4 cup butter
1/2 cup milk
1 tablespoon vanilla
1/2 teaspoon almond extract
Pinch of salt

Mix the butter and half of the powdered sugar until well incorporated. Slowly mix in the other wet ingredients until all are combined. Mix in the remaining sugar and salt until peaks form. Do not over mix, you want to keep the frosting thick.
To start making the sugar cookie bites, you'll spoon large spoonfuls of the frosting into your bowl of crumbled sugar cookies. Mix well and add spoonfuls of frosting until you've used it all and the mixture is well combined.
Form heaping spoonfuls of the cookie and frosting mixture into balls. You'll need to pack them firmly to keep them from falling apart. Once you've rolled out all of the mixture and have your sugar cookie bites, you will use dipping chocolate (I used white, but you can use whatever color/flavor you prefer) to dip each bite into. While the dipping chocolate is still warm, toss some sprinkles on top! Let cool for a few hours, or put them in the fridge for 30-45 minutes, until completely cool.
Serve with a glass of cold milk and enjoy!
