I’m really impressed with these jelly roll pans! They’re incredibly thick and sturdy—definitely not the flimsy cookie sheets that warp in the oven. I’ve used them for everything from baking cookies to roasting vegetables, and I even used one as a tray for my barbecue skewers. They do retain a LOT of heat, so I’ve found that lowering the oven temperature by about 25 degrees works better for baking cookies. Once I figured that out, they worked beautifully.
