So far it's a great cutting board. Definitely have to follow the care recommendations for the initial oiling and seasoning for the first week or so. The item is made of all-natural American Black Walnut wood. Walnut sapwood is white and John Boos uses all of the wood. It's a tone color of the wood and the tone of the wood varies within the tree itself. Variations in the final product are not defects and therefore not covered under our warranty.
