This pain is as close as it gets to perfection! It heats evenly, is scratch-resistant (no plastic or silicone tools required) and is as close to non-stick as any other pan I've tried and I've tried several! It's so much less finicky than my stainless steel or carbon steel pans. Worth every single penny and I'd buy it again in a heartbeat. The size is perfect for things like browning taco meat or large batches of sauce. The high sides mean that my stove top stays clean because nothing is splashing over the edges. My only qualm is that it's not dishwasher safe. But it's so easy to clean that not using the dishwasher hasn't been an issue for me at all so far. 10/10 would recommend!. A.. United States. I absolutely love this stone pot. Its non stick and my Jamaican oxtail stew came out delicious! I love the shape and how heavy it is. However it is a little too wide for my burner and the has more heat in the middle than the outer rim when cooking. I had to keep checkingadjusting it too make sure it was seated on the burner perfectly yet my stew came out amazing! This is a very small pan, which is exactly what I wanted. My go to pan was Farberware, and it is over 20 years old, horrible condition as it will not even fry an egg without sticking now. We are great cooks in this house and somehow we can still make our old pans work. BUT....This Viking pan is next level amazing. I see why its so expensive. It is heavy like a cast iron pan and I love love love that!! I cooked an egg in it without using any oil. Now I am obsessing and want a whole set. I just have to figure out a way to explain to my husband why we need 600 pots and pans lol. Maybe I can compare my pots and pans to some of those high end tools he has in the garage lol. Wonderful pan! Very well made. NOTE: We bought the Stainless Steel version of this Classic Country Pan pan (not the yellow or red one).Anyhow, this VERY LARGE 9 quart covered S.Steel pan really should be called a "LARGE SAUTE` PAN" because it is 4 inches high and 15 inches in diameter. It is like a PAELLA type sautee` pan, and not really what I would call a "stock pan" (as the title says). Thus, if you are looking for an extra large (HUGE) and low sautee` pan with a lid that is INDUCTION COOK TOP compatible, then this pan is for you. This pan has 2 helper handles too, which is great since this pan is so heavy. And the heaviness of this pan is actually nice since it will not warp! The lid is also heavy so that it will not warp. I must say that this pan is multi-functional because it can be used as a Frying Pan, or a Sautee` Pan, or as a STIR FRY pan, if you are trying to feed a LARGE CROWD. We bought this pan to cook for a larger crowd, and therefore we chose this 15 inch pan for this purpose. Also, it is VERY HARD to find a sautee` pan in this size. We looked everywhere and this pan was the only one we found that is LARGE, well made, heavy, and from a reputable company. Also, for this size pan (9 quart) , the cost was much less than Tramortina or All-Clad...So that's another PLUS!...WE are very pleased and the packing was AMAZING (double boxed) and it arrived in perfect condition.. For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 12-Inch Wok is the perfect pan. The “Blue” in “Blue carbon steel” references a heat treatment process to help resist rust and corrosion, a nuisance that can plague traditional cast iron pans. Stay-cool cast iron handles securely attach to the pans with heavy duty rivets for confidence in construction and a lifetime of use. Though cast iron also excels as maintaining even heating, it can take time to rise to temperature and since iron itself is so brittle, more of the material must be used to make it durable, making traditional cast iron pans larger and heavier. With blue carbon steel, you’ll have a pan that is noticeably lighter without sacrificing performance. And like cast iron, blue carbon steel also heats quickly and evenly, reducing the risk of hot spots from occurring. There are plenty of methods to seasoning your pan, but if this is your first time seasoning the pan, we recommend using very hot water and dish soap to first scrub the pan, then wipe dry and place it on the burner at low heat to finish drying. Add some oil to the pan and cook over medium heat for about 10 minutes. Then, let the pan cool and wipe with paper towels and your pan is ready for use! For future maintenance, simply rinse the pan with water after use and scrub gently with a soft-bristled brush or sponge if necessary (No need for soap!). Season with vegetable oil periodically to maintain its smooth cooking surface and nonstick properties. It is not recommended to put these pans into the dishwasher as it will remove the seasoning, reduction the natural nonstick and making the pan more susceptible to rust. Should you find rust on the pan, like natural cast iron, this can be normal.
