The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower Damascus pattern. The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrast with the Damascus of the blade. Beautiful knife hits well above its price point. I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. It’s also much more user friendly, sharpened on both sides, stainless, and a more traditional shape- if that works for you. At 109 bucks it’s a steal. Get one!. Sean Conroy. Colorado Springs. Miyabi moves one step closer to perfection with Kaizen II – Japanese for “improvement” or "change for the better." The Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design. The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And Miyabi Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double Friodur® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting. The blade is balanced by a substantial D-shaped handle made of Black Pakka wood. Effortless to hold, the classic Japanese “D”-shape handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade. Handcrafted in Seki, Japan, a city renowned for its highest quality cutlery production.

[This review was collected as part of a promotion.] It's the best knife I've ever had. I had to decide if I was going to keep it at home or use at work in my commercial kitchen. Ultimately, I decided I wanted it all to myself. It has the perfect weight, and it's so sharp. The design is a huge perk. I'll definitely get the others.. Haleyt11_454107. Tue Nov 26 2024
