Bon Chef's flatware is designed for commercial use, heavy 18/8 stainless steel. Handling instructions: Do not soak in water with other metal objects. Carefully clean after use. Wash in hot water with a non-abrasive non-corrosive cleaning agent. Rinse in water at least 180 degrees. A wetting agent or water softener may be required if using water with high mineral content. Product was an excellent value for the price paid, appears well made, solid, comfortable handles fit well into your hand with just the right heft. If the blade edge holds up with day to day use, and edge is easy to maintain and keep sharp then this is truly an exceptional value for the price paid. I know that I could have spent a LOT more and perhaps gotten better quality, but these seem to have a great feel to them during use and come with a lifetime warranty. The real test will be edge retention and how often I will need to sharpen them with regular use. I am very happy with my purchase so far, and maybe if you were a professional chef you may require the very best, but for the average home cook, these are extremely nice for the price paid and I would not hesitate to recommend them to friends and family..
