I ordered this deep fryer because it offered two individual baskets. For instance, frying shrimp in the same oil as mozzarella sticks would not to appetizing to the diner. The various temperature variations allows me to prepare two separate meals which may require different cooking times. I especially like that my meals are ready at the same time rather than frying one item and setting it aside while the second item cooks. I planned to make beignets for Easter morning. Plugged the fryer in and set to 350 degrees. The oil started to smoke.
