I have several stove top smokers. This is one of them. It does a good job, you just have to insure the wood chips (make sure they are real fine) don't get wet from the juices. A little foil on the bottom with the ends turned up will do the trick. I smoke salmon regularly for my wife. Since I cook on an induction top, this smoker makes good contact with the hob and works efficiently. You will have to experiment to get your desired smoke flavor.. Jtom4cats. This is a very small pan, which is exactly what I wanted. My go to pan was Farberware, and it is over 20 years old, horrible condition as it will not even fry an egg without sticking now. We are great cooks in this house and somehow we can still make our old pans work. BUT....This Viking pan is next level amazing. I see why its so expensive. It is heavy like a cast iron pan and I love love love that!! I cooked an egg in it without using any oil. Now I am obsessing and want a whole set. I just have to figure out a way to explain to my husband why we need 600 pots and pans lol. Maybe I can compare my pots and pans to some of those high end tools he has in the garage lol.
