Season it exactly as instructed, then used it right away. I made paella and it turned out pretty good. It will take a couple tries to get it perfect, but this is the right pan for the job. I just set up the grill I ordered along with the paella pan! This is the 24" pan and it's big. It beautiful can't wait to use it out doors! The box was open, single layer cardboard, with no tape. It smelled oddly of floral perfume. Inside was the heavy, beautifully smooth carbon steel paella pan, with instructions on how to season it.
