Chef S Choice Steel Carving Set

The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower Damascus pattern. The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrast with the Damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen. Handcrafted in Seki, Japan.

Beautiful knife hits well above its price point. I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. It’s also much more user friendly, sharpened on both sides, stainless, and a more traditional shape- if that works for you. At 109 bucks it’s a steal. Get one!. Sean Conroy. Colorado Springs. High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.
