This pain is as close as it gets to perfection! It heats evenly, is scratch-resistant (no plastic or silicone tools required) and is as close to non-stick as any other pan I've tried and I've tried several! It's so much less finicky than my stainless steel or carbon steel pans. Worth every single penny and I'd buy it again in a heartbeat. The size is perfect for things like browning taco meat or large batches of sauce. The high sides mean that my stove top stays clean because nothing is splashing over the edges. I have several stove top smokers. This is one of them. It does a good job, you just have to insure the wood chips (make sure they are real fine) don't get wet from the juices. A little foil on the bottom with the ends turned up will do the trick. I smoke salmon regularly for my wife.
