I Just started using and now can afford the fine Shun knives. Quite a big improvement over my beginner set of 40 years ago. With each use of your knife, the edge naturally bends over just a tiny bit. The edge is still sharp, but the sharpest part isn’t making contact with the food. The answer is honing. It realigns the edge and prolongs the sharpness. This honing steel has 2 surfaces a smooth 1 for every day honing and a micro-ribbed 1 for weekly honing. It has a built-in angle on the handle, which makes it easy to hone your knives to the correct 16° Shun angle.

Best knife I ever owned! Wished I had this years ago. I’ve learned to take very good care of it, never put it in the dishwasher and store it in it’s own special spot (away from the other knifes). It’s razor sharp - watch your fingers. Let all your family members know to handle with care! It’s thin and can be easily bent. My husband bent the tip cutting through frozen meat (big-no no). It has a fine carbide steel core with a hardness that gives very good cutting edge retention and initial sharpness. The core is embedded in 48 layers of steel which gives each blade its unique Damascus-design pattern. Razor-like sharpness is achieved by a three-stage grinding, sharpening, and polishing process called Honbazuke honing. The entire length of the cutting edge can be used as there is no finger guard. For best care, wash by hand, and maintain and sharpen using whetstones. We’d recommend using a wooden chopping board as opposed to glass, ceramic, or stone boards as these will dull the cutting edge.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. What have I been using all of these years? I’ve been cooking for over 50 years. When I tried my new Shun classic utility knife on a grilled steak, I felt like all previous knives had been kindergarten scissors. I’m not really exaggerating. The control and ease of slicing through ingredients is s revelation. I always thought I had a decent knife with my Wusthofs.
