This set are amazing they heat up even and quickly on my induction stove. Love the weight and the clean up is nice. Just make sure to let the pans cool down before cleaning . This is a very small pan, which is exactly what I wanted. My go to pan was Farberware, and it is over 20 years old, horrible condition as it will not even fry an egg without sticking now. We are great cooks in this house and somehow we can still make our old pans work. BUT....This Viking pan is next level amazing. I see why its so expensive. It is heavy like a cast iron pan and I love love love that!! I cooked an egg in it without using any oil. Now I am obsessing and want a whole set. I just have to figure out a way to explain to my husband why we need 600 pots and pans lol. Maybe I can compare my pots and pans to some of those high end tools he has in the garage lol. A very good range/stove that we have used for the last year. It has a few idiosyncrasies to which we have become accustomed. The clock is ridiculously hard to set. We have to look it up every time the time/date changes. There is no automated option. No smart connection for this unit at all, which is a plus and a minus. The power is insanely good. It can boil water so fast. The oven is very even. The unit feels solid. Placing a pot on an unused hob will result in a clicking noise that happens every few seconds. At first this drove me nuts, but now it's fine. The induction is fairly loud, especially when placed at a high level. The stainless steel scratches fairly easily. At first this was annoying, but now it's a kind of patina. This thing gets some serious use daily and I'm okay with it. Delivery was uneventful. I did need to make some mods to my electrical outlet but that was no big deal. Cost me $200 to get an electrician out. Make sure you have the outlets and plugs that you want/need in advance.. Adam. For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10-Inch Fry Pan is the perfect pan. Featuring a 10’’ size for added versatility, this pan is made of carbon steel, an alloy that is a combination of iron and carbon. The “Blue” in “Blue carbon steel” references a heat treatment process to help resist rust and corrosion, a nuisance that can plague traditional cast iron pans. Stay-cool cast iron handles securely attach to the pans with heavy duty rivets for confidence in construction and a lifetime of use. Though cast iron also excels as maintaining even heating, it can take time to rise to temperature and since iron itself is so brittle, more of the material must be used to make it durable, making traditional cast iron pans larger and heavier. With blue carbon steel, you’ll have a pan that is noticeably lighter without sacrificing performance. And like cast iron, blue carbon steel also heats quickly and evenly, reducing the risk of hot spots from occurring. Blue carbon steel is also prized for achieving high temperatures quickly without fear of damage occurring to the pan itself. Viking Blue Steel is oven safe to 450°F for restaurant quality finishing in the oven. Like cast iron, your blue carbon steel pan will need to be seasoned regularly to maintain its nonstick properties. “Seasoning” refers to the process of coating the base of the pan with a thin layer of oil that imparts a flavorful taste to your foods while also protecting foods from sticking. There are plenty of methods to seasoning your pan, but if this is your first time seasoning the pan, we recommend using very hot water and dish soap to first scrub the pan, then wipe dry and place it on the burner at low heat to finish drying. Add some oil to the pan and cook over medium heat for about 10 minutes. Then, let the pan cool and wipe with paper towels and your pan is ready for use! For future maintenance, simply rinse the pan with water after use and scrub gently with a soft-bristled brush or sponge if necessary (No need for soap!). Season with vegetable oil periodically to maintain its smooth cooking surface and nonstick properties. It is not recommended to put these pans into the dishwasher as it will remove the seasoning, reduction the natural nonstick and making the pan more susceptible to rust. Should you find rust on the pan, like natural cast iron, this can be normal. Great knife set! Really happy with the purchase. We are trying very hard not to put them in the dishwasher but occasionally one gets by us and our kids do it, however the knives have held up! The scissors are a great extra. The other thing I love not only about the knives but the block they rest in doesn’t take up much counter space and the color is beautiful.
