This 1,000 grit whetstone is a medium grit. You can use oil or water, no need to soak (It’s made from a synthetic material) you can just sprinkle on the oil or water and start sharpening. This is the only electric sharpener I know of where you can change out a sharpening stone set to switch from 20-degree-bevel knives (western knives) and 15-degree-bevel knives (asian knives) . The sharpener isn't cheap, but it seems to work really well and it saves having to chase down a sharpening service (who probably uses the same equipment) every time I need to touch up my kitchen knives..
