I use it to cook on the stove top and convection. It cooks evenly and it's durable yet isn't so heavy that it's easier to use than any other cookware I've had in the past. I have been eyeing Hestan for a year or more. I know it’s pricey. But for me I am almost 40. My husband and I have been married for over a year and our current pot and pan situation is a mix from our college days and donations from various family members trying to rid of their old pots and pan. Had little water marks coming out of the dishwasher which I don’t mind but they do have a polish they sell if you are displaying your pots. I heated up some brown sugar and butter. Which turned out great. Only tip I got from Hestan when I called about the different pans. Was it you have an electric stove with coils. The wok cooks very well and evenly! The handles get hot quickly so use an oven mitt or pan handler to hold on them. It is virtually non-stick if you use a little oil and get it up to the right temperature.
