I am going to include a picture of both my new pan and my pan that has been used several times as you will see there is no discoloration as people have complained about. I grease and flour my pans. this is a beautiful set. I do wish the lid fit differently though - in that the way it is designed is that it recesses down into the space of the pan - so if you want to use the lid as a lid rather than a platter - you need to take that into consideration on how full your dish is in the pan.
