This pan is amazing. I'm not great at cooking with stainless steel but I can tell it's definitely easier release than other's I've tried with. It's feels heavy and durable in hand, and I had an existing lid that fits this universal 9.5in diameter, so it's not a big deal that it doesn't come with it's own lid. (My Demeyere Sautese lid fits it perfectly too). I've made lots of sauces with this--I wanted something that could stand up against a metal whisk without worrying about scraping off any coating.. This is a very small pan, which is exactly what I wanted. My go to pan was Farberware, and it is over 20 years old, horrible condition as it will not even fry an egg without sticking now. We are great cooks in this house and somehow we can still make our old pans work. BUT....This Viking pan is next level amazing. I see why its so expensive. It is heavy like a cast iron pan and I love love love that!! I cooked an egg in it without using any oil. Now I am obsessing and want a whole set. I just have to figure out a way to explain to my husband why we need 600 pots and pans lol. Maybe I can compare my pots and pans to some of those high end tools he has in the garage lol. For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10-Inch Fry Pan is the perfect pan.
