The steam creates pressure to force the water into the filter holder and through the coffee grounds to brew the espresso directly into the glass carafe. When you finish frothing, turn the selector switch back to the coffee brewing position. I find this portafilter to be particularly useful for testing extractions on La Specialista machines. I have the touch model, and it works perfectly. This Espresso Machine was a little difficult to get started as the directions were not clear. It took hitting the espresso button multiple times to get it started working. This is so pretty! I’m doing a kitchen refresh and decided this would look great on the stovetop between the green cabinets with the off white tiles (not yet installed). The whistle is annoyingly loud, so you will hear it no matter where you are. You do have to flip the spout cover up independently of the handle I don’t mind, but you might.
