Masahiro High Carbon Plastic Knife

High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

Wüsthof is the first knife manufacturer to offer black, fully forged, DLC-coated knives. The diamond-like carbon coating was developed to withstand the toughest conditions: The amorphous carbon layer, just a few micrometers thick, increases the surface hardness of our Wüsthof blades from 58 to a unique 104 Rockwell. This makes them resistant to acids, alkalis, extreme temperatures, and general wear and tear – even scratches don't stand a chance. The dynamics of our sharp knives are complemented by the slip-resistant hexagon power grip. Chefs love these outstanding knives that sit perfectly in the hand and guarantee complete control, even under the most demanding working conditions. As a family business now in the seventh generation, Wüsthof has been producing knives in Solingen – known as a ‘City of Blades’ – since 1814. Excellent quality, sustainable operations, and innovative ideas guarantee that our production process is among the most advanced of its kind. Our traditional family company is one of the world’s premium manufacturers of high-quality knives. We are expert producers of knives for cooking, such as chef’s knives, specialist knives, paring knives, all-purpose knives, and additional kitchen accessories and/or kitchen aids such as scissors to useful knife blocks, and many more items to do with sharp knife blades. From knife skills workshops on the optimal use of cook’s knives, peeling knives, or bread knives, the high-quality knife sharpener or sharpening steel, the blade-protecting cutting board, or the practical knife set – you will always find a great gift idea in our Wüsthof range.

Excellent all around. Sandesh. New York, NY. Sun Sep 27 2026

Shaped like a slender cleaver, this professional knife performs impeccably on everything from summer tomatoes to winter squashes. It offers excellent dexterity for dainty cutting and slicing tasks and can be wielded with speed and accuracy thanks to the unique VG10 Damascus steel composition – which provides a superbly sharp and efficient edge that will retain its sharpness for long periods, even with heavy daily use.

I absolutely love this nice. Solid but not overly heavy, well balanced, full tang and keeps a very sharp edge. In addition, presents itself well and comes in very nice packaging. It's really amazing how much difference good knives make. This one gets a lot of use in my kitchen!. Joe. Enumclaw, WA. Sat Jun 18 2022

Forged from a single piece of WÜSTHOF steel, offering precision and a lot of power in the hand, the Chinese cook’s knife will allow you to chop cabbage or cut wafer-thin slices from a tomato in seconds, while the wide blade is also ideal for scooping up prepped ingredients and transferring them to the pot. The fine cutting edge ensures exceptional sharpness, but should not be used on bones or very hard fruits (such as coconuts).

I hated this knife when I first acquired it. It felt heavy and unbalanced. Other Chinese style cleavers I have handled were much lighter in hand. Due to Wusthof's forging process, this knife is heavier and more substantial than traditional Chinese cleavers. Plus, the wide blade makes for a lot of metal, so be aware that this is not a lightweight knife. This knife just didn't feel right to me, so I put it away for a year or more. I decided to give it another shot and used it instead of a Western chef's knife for a few weeks. Once I got used to the heft and feel I started to like this knife more and more. Despite it's size, this knife excels at slicing vegetables. It is not a chopper--using it like a regular cleaver will damage the fine edge. Due to the relatively flat blade geometry this knife does not do rocking motions well. If I have a small amount of fine mincing to do I'll rock this knife and it works, but I don't like it and I don't think the knife likes it too much either. This may be the best knife in my house for thinly slicing onions. Counterintuitively, the large blade really helps here. Using a claw grip to hold the vegetables, this knife will glide against your knuckles, allowing you precise control over the thickness of your cuts. I feel that it beats a chef's knife in this regard since your knuckles never reach the top of the blade. It also excels at chopping romaine lettuce cut across the head in strips. The large blade keeps the ribbons of cut lettuce where they belong rather than flopping back to the uncut side. And as a bonus, when slicing items like cucumbers, all of the cut cukes will often stick to the blade so that when you finish you just wipe them from the blade into the appropriate bowl in one swoop, saving you from lifting them off the cutting board (and cukes do like to stick to the cutting board). At this point I use this knife almost every night to prep our veggies. I still love my Western chef's knives, but this cleaver is in heavy rotation and is usually what I reach for when slicing vegetables. If you are used to the lighter, more traditional Chinese style cleavers that you see in Asian grocery stores this knife might feel strange to you. But if you take the time to bond with it, this knife might just become one of your favorites.. Just Call Me B. Pittsburgh. Thu Apr 08 2021

For use on fish, meat, and fruit: While boning knives or cleavers are more suitable for coarser tasks, especially for meat, the filleting knife, with its flexible blade, is particularly suitable for wafer-thin filleting. Precision cutting of meat, loosening the fish fillet from the skin, or peeling fruit – these are the fish filleting knife's special talents.

The PRO yanagiba is a traditional, single-beveled, Japanese slicing knife. The name means "willow blade leaf" and refers to the blade's long, narrow profile. It is the ideal kitchen knife for creating the thin, perfect slices of raw fish needed for sashimi. To slice with the PRO Yanagiba, start with the back of the knife blade and simply pull it through the fish, letting the weight of the blade itself do the work.

Forged from a single piece of WÜSTHOF steel, the Ikon 7" Chinese Chef’s Knife delivers precise, powerful chopping—slice cabbage or shave wafer-thin tomato slices in seconds—and its wide blade doubles as a scoop for transferring ingredients; the fine cutting edge is exceptionally sharp but not for bones or very hard fruits (e.g., coconuts)—for those tasks, use a European Cleaver or Butchers Knife.

The ultimate tool for all tasks that place high demands on the sturdiness and power of the knife, the Cleaver makes the cutting of ribs, racks, bones, and also extremely hard-skinned fruit, such as coconuts, easy. The large flatness of the blade, together with its strength and rigidity, makes for easier and fatigue-free prepping. Another knife for coarser tasks, which can also be used for cutting, is the butcher's knife.
