High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

Beautiful knife hits well above its price point. I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. It’s also much more user friendly, sharpened on both sides, stainless, and a more traditional shape- if that works for you. At 109 bucks it’s a steal. Get one!. Sean Conroy. Colorado Springs. Classic Ikon knives feature a distinctive, double bolster design for professional-style heft, exceptional balance, and beauty. The handle is made of highly durable synthetic material – polyoxymethylene (pom) – which has a tighter molecular structure to resist fading and discoloration. The elegant shape of the handle is designed for a comfortable grip.

Beautiful, comfortable to use and very sharp. I bought this to replace my old Wusthof classic santoku that the handle deteriorated after 30 years of being put in the dishwasher. (I’ll be handwashing these.) The price for the set at Wayfair was lower than anywhere else I looked. I had some confusion about the length of the larger knife’s blade. The Wayfair description says 6” and I was worried that it would be shorter than the one I was trying to replace. But, the new Ikon knife blade actually measures 6.75” and is exactly the same as my old classic santoku. I’m very pleased to have these knives.. Sbb. CA. Tue Sep 22 2026

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023

Miyabi 5000 FCD Shotoh, 9cm blade. This Japanese photo, also known as a vegetable knife, has a hard fine carbide steel core which gives very good cutting edge retention and sharpness. It is lightweight and nimble, and suited for cutting, peeling small fruit and vegetables. The FC61 steel core of the blade is embedded in 48 outer layers of Damascus-design steel, giving each knife its unique pattern. The cutting edge is symmetrical (not a single bevel) so it’s suitable for both right and left-handed use. The edge is Honbazuke-honed – a three-stage grinding, sharpening, and polishing process resulting in razor-like sharpness. There is no finger guard so the whole length of the cutting edge can be used. The Pakka wood handle seamlessly joins the half-bolster. The smooth join helps to prevent calluses from forming on the thumb and forefinger. For best care, it’s recommended to hand wash only. Maintain and sharpen on a whetstone, and using glass, ceramic, or stone cutting boards should be avoided as this can prematurely dull the cutting edge.

very good. Yevda. Brooklyn, NY. Thu Feb 11 2021
