Smaller and more nimble than the full-size chef’s knife, the Cuisine::pro KIYOSHI 6" Mini Chef’s Knife features a short, sharp blade ideal for tasks requiring precision. [This review was collected as part of a promotion.] It's the best knife I've ever had. I had to decide if I was going to keep it at home or use at work in my commercial kitchen. Ultimately, I decided I wanted it all to myself. It has the perfect weight, and it's so sharp. The design is a huge perk. I'll definitely get the others.. Haleyt11_454107. Tue Nov 26 2024

High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

They’re ok. I feel like for the quality of the cut, the blades wouldn’t rust in water.. Julia. Melbourne, FL. Wed Oct 14 2026

Overall, it's a good knife set. The knives are very sharp and look nice, but the blade edges seem a bit too thin and delicate. One of the knives accidentally fell on the floor, and the edge bent. I expected better durability from HENCKELS.. Meltem. Sun Oct 11 2026

Miyabi moves one step closer to perfection with Kaizen II – Japanese for “improvement” or "change for the better." The Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design. The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And Miyabi Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double Friodur® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting. The blade is balanced by a substantial D-shaped handle made of Black Pakka wood. Effortless to hold, the classic Japanese “D”-shape handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade. Handcrafted in Seki, Japan, a city renowned for its highest quality cutlery production.

The line is as beautiful as it is comfortable. Blades are finished with a hammered surface, and bead blasts accentuate the difference between the hard and soft layers.
