This pan is amazing. I'm not great at cooking with stainless steel but I can tell it's definitely easier release than other's I've tried with. It's feels heavy and durable in hand, and I had an existing lid that fits this universal 9.5in diameter, so it's not a big deal that it doesn't come with it's own lid. (My Demeyere Sautese lid fits it perfectly too). I've made lots of sauces with this--I wanted something that could stand up against a metal whisk without worrying about scraping off any coating.. There is no safer and better way to cook than a set of pans like these. You never have to worry about getting cancer with these. I have bought the most expensive, highly rated no stick pans and after a few years use, they ALL started to peal and scratch, even using the proper tools. These pans I treat like my cast iron pans of over 30 yrs. old. The first time I used them, I cleaned like my cast iron. It took about 8 uses but after that, the eggs slip right out. I never use soap on them, just a stainless steel scrubber with some salt and oil and than put a light coat of oil on them before I put away. If there is burnt on food, I put some water in them and let them sit while I eat and all I need to get the cooked on food off, is my stainless steel scrubber and they clean just as well as any non stick. I love them and the will last for years. A lot longer than any non stick.. Cathy. Wisconsin. Wed Oct 15 2025

Like cast iron, but better. the best-selling Carbon Steel Frying Pan, seasoned with a mixture of shea nut oil and coconut oil, we’ve taken care of the first two seasonings (the hardest ones) so you can experience the difference Carbon Steel makes on day one. the Carbon Steel combines the heat retention of cast iron with the control and maneuverability of Stainless Clad, resulting in a natural non stick alternative. We stamp Carbon Steel into a thin disc that’s half the weight of cast iron but every bit as durable—so it seasons faster, responds quicker, and is rugged enough for the grill or open flame. With sloping walls and a wide surface, this pan provides maximum heat contact for high-heat searing. See how this chef-loved pan will replace cast iron as the favorite kitchen heirloom.
