I have used this for many batches of canning by this point, and it works very well. I can do relatively large loads at a time. I can get the water high enough for Quart sized jars too, but you need to manage the boil so it doesn't get too aggressive and spill out. I feel like this has been pretty versatile for me, and I don't have to worry about enamel flakes from those enamelware waterbath canners in something like this. I also love that this is induction compatible, because I had actually purchased this before replacing my stove and hadn't even taken that into consideration at the time.
