The defrost option is very helpful when you forget to defrost your meat but need to cook. We have also enjoyed using the temp and hold option. Love this pressure cooker! I've been using an aluminum PC for years, but recently changed to an induction cooktopand needed an induction compatible PC. It's easy to close the lid securely, to tell when pressure has been achieved, and to quick release the pressure. Yes, it's expensive, but I'll have it the rest of my life and pass it on when I die.
