I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Beautiful knife, it looks like a katana, it looks small but I can handle it very nicely. Super sharp knife, it is like a straight razor blade ( you can shave your hand) so be very careful with it. Beautiful, comfortable to use and very sharp. I bought this to replace my old Wusthof classic santoku that the handle deteriorated after 30 years of being put in the dishwasher. (I’ll be handwashing these.) The price for the set at Wayfair was lower than anywhere else I looked. I had some confusion about the length of the larger knife’s blade. The Wayfair description says 6” and I was worried that it would be shorter than the one I was trying to replace.
