Made with AUS10A high-carbon stainless steel reinforced with vanadium and an angled, tagayasan wood handle, this all purpose knife is strong, durable and precise. The butt of the knife is designed to function as a bottle opener and allows for easy hanging on knife hooks. Supported by free sharpening and honing. Handcrafted in Japan, the Shun Kanso Santoku Knife adds essential simplicity to any cooking knife collection.

This is a beautifully crafted knife. The blade is beautiful and made with the devotion that Japanese craftsmen are famous for. The wooden handle is a lovely dark brown and fits nicely in my hand. This is more than a kitchen knife, it is a piece of art and deserves special care. No dishwasher, dry immediately after use and store such that it won't nick you or be nicked by other cutlery.. Organize and showcase your knives with the Hecef double‑sided magnetic knife block. Powerful nickel‑plated magnets are embedded beneath solid acacia wood to hold metal kitchen tools securely while the smooth wooden surface helps protect knife edges. With magnetic panels on both sides, this stand stores more knives than a traditional slot block and keeps your most‑used tools visible and ready. Non‑slip felt pads on the base add stability on slick countertops, making this a practical, space‑saving upgrade for any kitchen.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023

The Shun kanso BBQ set features the three key knives you'll need to handle grill worthy proteins of all types all in a handsome shun knife roll, perfect for when you take your BBQ show on the road. This gorgeous set includes the shun kanso honesuki, a Japanese style poultry knife, the Shun kanso boning fillet knife and the Shun kanso brisket knife, ideal for trimming and slicing larger cuts of meat, including brisket, ham, roasts and turkey. Brisket knife includes its own wooden saya, or sheath. Kanso is a design principle based on zen philosophy. It means “simplicity,” but simplicity that is achieved by eliminating the non essential. In kanso, QKA/Shun took away anything that doesn’t matter and kept everything that does: high performance steel, razor sharp edge, perfect balance and precision cutting control. The steel is Japanese aus10 a highly refined, high carbon, vanadium stainless steel that takes a razor sharp edge and holds it longer. Kanso's heritage finish hides scratches and gives kanso a rustic look that just improves with age. The handle is made of a wood called tagayasan or wenge, which is sometimes known in Japan as “iron sword wood.” the handle contouring enables an easy chef's grip. Full tang construction provides strength, balance and easy cutting control. Like all Shun knives, kanso is sharpened to a 16° cutting angle each side to cut cleanly and help preserve food’s freshness and best taste.

Each elegant knife is crafted in Seki, Japan. There, artisans merge rich Japanese tradition with expert German engineering and state-of-the-art steels to produce these ultimate kitchen knives. This cutting-edge steel ensures the hand-honed blades retain their impressive sharpness for a long time. Thanks to an innovative, ice-hardened process, the blades offer remarkable durability, sharpness, and cutting performance. The stunning blades are finished with a true katana edge, homage to the samurai swords made in Seki centuries ago, and feature an embossed logo. Stylishly stamped with a silver mosaic pin, the exquisite octagon-shaped handle feels as good as it looks. The Pakkawood handle supports both Western chopping and Asian rocking cuts - experience ergonomic perfection with each slice.

These things are SHARP! I hope they will last but they are beautiful out of the box. The scissors are just run of the mill shears but everything else is really nice.. Mark. Tue Jun 22 2021

High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.
