The Shun kanso BBQ set features the three key knives you'll need to handle grill worthy proteins of all types all in a handsome shun knife roll, perfect for when you take your BBQ show on the road. This gorgeous set includes the shun kanso honesuki, a Japanese style poultry knife, the Shun kanso boning fillet knife and the Shun kanso brisket knife, ideal for trimming and slicing larger cuts of meat, including brisket, ham, roasts and turkey. Brisket knife includes its own wooden saya, or sheath. Kanso is a design principle based on zen philosophy. It means “simplicity,” but simplicity that is achieved by eliminating the non essential. In kanso, QKA/Shun took away anything that doesn’t matter and kept everything that does: high performance steel, razor sharp edge, perfect balance and precision cutting control. The steel is Japanese aus10 a highly refined, high carbon, vanadium stainless steel that takes a razor sharp edge and holds it longer. Kanso's heritage finish hides scratches and gives kanso a rustic look that just improves with age. The handle is made of a wood called tagayasan or wenge, which is sometimes known in Japan as “iron sword wood.” the handle contouring enables an easy chef's grip. Full tang construction provides strength, balance and easy cutting control. Like all Shun knives, kanso is sharpened to a 16° cutting angle each side to cut cleanly and help preserve food’s freshness and best taste.

Miyabi strives for perfection with Kaizen - Japanese for "improvement" or "change for the better." This line of knives combines the best hardening technology with the artistry of traditional Japanese craftsmanship. The resilient core of VG10 super steel is protected by a stunning 64-layer flower Damascus pattern. The Cryodur blades feature exceptional sharpness and durability thanks to their innovative, ice-hardening treatment. Then, artisans hand-hone the blades with the historic Honbazuke method. This attention to detail translates into precision cutting for Miyabi Kaizen users. The blade is balanced by a refined D-shaped handle made of black linen Micarta. With a wood-like texture, the comfortable handle won't slip from your hand and acts as a moisture repellant.

I rarely write reviews however this time I will make an exception, why The silverware is nothing short of stunning! In fact as a collector of art, I would say the only thing that out paces the silverware as art is the quality and craftsmanship. They are weighted perfectly not too heavy and not too light. I held a place setting aka 5 pieces and let me say, you know you have hold of something or one might say , something (the silverware) has hold of you. Excellent choice and I highly recommend! High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

They’re ok. I feel like for the quality of the cut, the blades wouldn’t rust in water.. Julia. Melbourne, FL. Wed Oct 14 2026
