These knives are made with quality and have held up well considering some of the reviews I read through. A few of the reviews stated there was rusting on the knives and they weren’t dishwasher safe after all. I can confirm personally that it’s dishwasher safe and there’s zero rusting. Overall quality exceed the cheaper price the knives are selling for. I have zero regrets buying these knives and will buy again when the time comes.. Carll. Montgomery, TX. Tue Sep 15 2026

Miyabi moves one step closer to perfection with Kaizen II – Japanese for “improvement” or "change for the better." The Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design. The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And Miyabi Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double Friodur® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting. The blade is balanced by a substantial D-shaped handle made of Black Pakka wood. Effortless to hold, the classic Japanese “D”-shape handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade. Handcrafted in Seki, Japan, a city renowned for its highest quality cutlery production.

Offering precision and a lot of power in the hand: the WÜSTHOF 8" Chinese Chef's Knife will allow you to chop a cabbage or cut wafer-thin slices from a tomato in seconds, while the wide blade is also ideal for scooping up prepped ingredients and transferring them to the pot. The fine cutting edge ensures exceptional sharpness but should not be used on bones or very hard fruits (such as coconuts); instead, we recommend a Cleaver or Butchers Knife.

Nice heft to the knife and feels like a dream. We cook all our meals from scratch and host dinners often. So the knives in our kitchen have to deliver and this one has been a brilliant addition to the team. It is one of our favorites!. Roopa B.. Fri Jul 03 2026

the handle of these knives in rosewood is magic. perfection, really...the fit in your hand, the density and richness of the wood, the balance and lightness of the blade, which is brilliantly tempered and so sharp you probably wouldn't even feel it if you were to cut a finger off. This is the kind of knife that just feels right, the kind you want to put under your pillow at night. Not only for protection, but also a mysterious desire to always keep it closeby.. Markbmasamune. High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

They’re ok. I feel like for the quality of the cut, the blades wouldn’t rust in water.. Julia. Melbourne, FL. Wed Oct 14 2026

Forged from a single piece of WÜSTHOF steel, offering precision and a lot of power in the hand, the Chinese cook’s knife will allow you to chop cabbage or cut wafer-thin slices from a tomato in seconds, while the wide blade is also ideal for scooping up prepped ingredients and transferring them to the pot. The fine cutting edge ensures exceptional sharpness, but should not be used on bones or very hard fruits (such as coconuts).

I hated this knife when I first acquired it. It felt heavy and unbalanced. Other Chinese style cleavers I have handled were much lighter in hand. Due to Wusthof's forging process, this knife is heavier and more substantial than traditional Chinese cleavers. Plus, the wide blade makes for a lot of metal, so be aware that this is not a lightweight knife. This knife just didn't feel right to me, so I put it away for a year or more. I decided to give it another shot and used it instead of a Western chef's knife for a few weeks. Once I got used to the heft and feel I started to like this knife more and more. Despite it's size, this knife excels at slicing vegetables. It is not a chopper--using it like a regular cleaver will damage the fine edge. Due to the relatively flat blade geometry this knife does not do rocking motions well. If I have a small amount of fine mincing to do I'll rock this knife and it works, but I don't like it and I don't think the knife likes it too much either. This may be the best knife in my house for thinly slicing onions. Counterintuitively, the large blade really helps here. Using a claw grip to hold the vegetables, this knife will glide against your knuckles, allowing you precise control over the thickness of your cuts. I feel that it beats a chef's knife in this regard since your knuckles never reach the top of the blade. It also excels at chopping romaine lettuce cut across the head in strips. The large blade keeps the ribbons of cut lettuce where they belong rather than flopping back to the uncut side. And as a bonus, when slicing items like cucumbers, all of the cut cukes will often stick to the blade so that when you finish you just wipe them from the blade into the appropriate bowl in one swoop, saving you from lifting them off the cutting board (and cukes do like to stick to the cutting board). At this point I use this knife almost every night to prep our veggies. I still love my Western chef's knives, but this cleaver is in heavy rotation and is usually what I reach for when slicing vegetables. If you are used to the lighter, more traditional Chinese style cleavers that you see in Asian grocery stores this knife might feel strange to you. But if you take the time to bond with it, this knife might just become one of your favorites.. Just Call Me B. Pittsburgh. Thu Apr 08 2021

Beautiful knife hits well above its price point. I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. It’s also much more user friendly, sharpened on both sides, stainless, and a more traditional shape- if that works for you. At 109 bucks it’s a steal. Get one!. Sean Conroy. Colorado Springs.
