Absolutely incredible rocking knife... I love the Miyabi Artisan series. Joy. San Diego, CA. Thu Aug 12 2021

Shaped like a slender cleaver, this professional knife performs impeccably on everything from summer tomatoes to winter squashes. It offers excellent dexterity for dainty cutting and slicing tasks and can be wielded with speed and accuracy thanks to the unique VG10 Damascus steel composition – which provides a superbly sharp and efficient edge that will retain its sharpness for long periods, even with heavy daily use.

I absolutely love this nice. Solid but not overly heavy, well balanced, full tang and keeps a very sharp edge. In addition, presents itself well and comes in very nice packaging. It's really amazing how much difference good knives make. This one gets a lot of use in my kitchen!. Joe. Enumclaw, WA. Fri Jun 17 2022

High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

They’re ok. I feel like for the quality of the cut, the blades wouldn’t rust in water.. Julia. Melbourne, FL. Wed Oct 14 2026

Smaller and more nimble than the full-size chef’s knife, the Cuisine::pro KIYOSHI 6" Mini Chef’s Knife features a short, sharp blade ideal for tasks requiring precision. Often called a “cook’s knife”, the chef’s knife is the most versatile tool in the kitchen, perfect for everything from slicing roasts to dicing vegetables. Its wide blade and curved edge allow a smooth rocking motion, making it excellent for techniques like mincing, julienning, and chiffonade.

[This review was collected as part of a promotion.] It's the best knife I've ever had. I had to decide if I was going to keep it at home or use at work in my commercial kitchen. Ultimately, I decided I wanted it all to myself. It has the perfect weight, and it's so sharp. The design is a huge perk. I'll definitely get the others.. Haleyt11_454107. Tue Nov 26 2024

The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower Damascus pattern. The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrast with the Damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen. Handcrafted in Seki, Japan.

Beautiful knife hits well above its price point. I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. It’s also much more user friendly, sharpened on both sides, stainless, and a more traditional shape- if that works for you. At 109 bucks it’s a steal. Get one!. Sean Conroy. Colorado Springs. My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023
