Its wide blade and curved edge allow a smooth rocking motion, making it excellent for techniques like mincing, julienning, and chiffonade.

[This review was collected as part of a promotion.] It's the best knife I've ever had. I had to decide if I was going to keep it at home or use at work in my commercial kitchen. Ultimately, I decided I wanted it all to myself. It has the perfect weight, and it's so sharp. The design is a huge perk. I'll definitely get the others.. Haleyt11_454107. Tue Nov 26 2024

The Shun Kanso 5.5-inch Hollow Ground Santoku Knife is a multipurpose knife used for just about every cutting job in the kitchen. Slightly shorter than the standard chef's knife, this Japanese steel knife is easy to maneuver and works well as a fruit, protein and vegetable knife. Hollow ground indentations reduce friction while cutting, making it easier to glide through food. Made with AUS10A high-carbon stainless steel reinforced with vanadium and an angled, tagayasan wood handle, this all purpose knife is strong, durable and precise. The butt of the knife is designed to function as a bottle opener and allows for easy hanging on knife hooks. Supported by free sharpening and honing. Handcrafted in Japan, the Shun Kanso Santoku Knife adds essential simplicity to any cooking knife collection.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023

This is a beautifully crafted knife. The blade is beautiful and made with the devotion that Japanese craftsmen are famous for. The wooden handle is a lovely dark brown and fits nicely in my hand. This is more than a kitchen knife, it is a piece of art and deserves special care. No dishwasher, dry immediately after use and store such that it won't nick you or be nicked by other cutlery.. High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

Classic Ikon knives feature a distinctive, double bolster design for professional-style heft, exceptional balance, and beauty. The handle is made of highly durable synthetic material – polyoxymethylene (pom) – which has a tighter molecular structure to resist fading and discoloration. The elegant shape of the handle is designed for a comfortable grip.

Beautiful, comfortable to use and very sharp. I bought this to replace my old Wusthof classic santoku that the handle deteriorated after 30 years of being put in the dishwasher. (I’ll be handwashing these.) The price for the set at Wayfair was lower than anywhere else I looked. I had some confusion about the length of the larger knife’s blade. The Wayfair description says 6” and I was worried that it would be shorter than the one I was trying to replace. But, the new Ikon knife blade actually measures 6.75” and is exactly the same as my old classic santoku. I’m very pleased to have these knives.. Sbb. CA. Tue Sep 22 2026
