Beautiful knife hits well above its price point. I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. It’s also much more user friendly, sharpened on both sides, stainless, and a more traditional shape- if that works for you. At 109 bucks it’s a steal. Get one!. Sean Conroy. Colorado Springs. High-carbon CR17 stainless steel blade. To boost its sturdiness, the steel contains 0.6-0.75 carbon. This makes it two times as hard as other knives in its class, as they contain about 0.3% carbon. Beautiful pattern: the special waved pattern blade is particularly striking (CR17 stainless steel kitchen knives, not real Damascus). Your investment is fully guaranteed. We offer a lifetime warranty and return policy. Ultra-sharp edge: it features an HRC (Rockwell hardness scale) of 57-58, which makes it among the toughest knives in its class. The thickness of this kitchen knife is 2.5mm. Ergonomically shaped handle: The blade of this chef knife is seamlessly integrated with the soft and comfortable Pakkawood handle, creating a perfect grip. The ergonomic shape strikes the right balance between the handle and the thin blade, ensuring ease of movement.

My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fortunately, it was quick to sharpen on the wet stone and wasn't too difficult to get it back to gliding through produce.. Mark T.. Sun Dec 24 2023

I used this knife to prepare dinner the day I bought it. It's replacing a 30+ year old Zwilling Santoku of the same size that has only one handle rivet left. I'm impressed with the balance of the new knife and feel of the handle, but I think I'll be learning how to chop with it, just for safety's sake, as my older knife is lighter. Its sharpness is perfect because of course, it's new. I was able to cut plum tomatoes, which can be a bit squishy, perfectly into small pieces. Chopping Boston Lettuce was easy and the knife handled its buttery texture well.. Bobthezman. Wed Sep 16 2026
