It is so light I can pick it up with one hand. My other cast iron and enamel cast iron pans are too heavy to handle that easily. The surface is smooth like stainless, but it has the even cooking temps that cast iron is know for. I notice that it does heat up faster that standard cast iron (maybe since it is lighter weight) so you need to adjust the heat down and it does not take as long to get to smoke point. For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10-Inch Fry Pan is the perfect pan. Love this frying pan with lid. The 12.25 inch is larger than your normal 11 inch pan making food easier to place in pan, cook and to flip over. The nonstick has the food slide off easily and no problem to clean. Faberware is a reputable product and the price was great, especially that it included a lid and 2 handles.
