This is a very small pan, which is exactly what I wanted. My go to pan was Farberware, and it is over 20 years old, horrible condition as it will not even fry an egg without sticking now. We are great cooks in this house and somehow we can still make our old pans work. BUT....This Viking pan is next level amazing. I see why its so expensive. It is heavy like a cast iron pan and I love love love that!! I cooked an egg in it without using any oil. Now I am obsessing and want a whole set. I just have to figure out a way to explain to my husband why we need 600 pots and pans lol. Maybe I can compare my pots and pans to some of those high end tools he has in the garage lol. Great pots and pans for the price never know what to buy anymore but this set I have purchased several times, they last several years with 4 hungry boys that torture them, dropping them using metal utensils cutting steaks in the pan with a sharp knife and the pans still keep on cooking….end of buying new set every 3-4 years not from the pans failure but from the kids torturing them and even then it’s just a skillet or 2 not the whole set… now we have lots of great pans…use them every day!!!. Unlike other pans I’ve used, this one has a very uniform temperature, which is essential for consistent cooking. Crispy gyozas: I love making gyozas in this pan. Because of the even heat, they come out incredibly crispy every single time, which was always a struggle with my older, non-uniform pans. Durability: The pan feels very heavy-duty and resistant. To keep the nonstick surface in perfect condition, I always make sure to use specialized utensils (like silicone or wood) instead of metal.
