This was my first experince cooking in stainless steel copper bottom pans. My first reaction was how evenly the copper disperses the heat through all the pan and thus through the food too. There were NO areas that were too hot or too cool. And because the heat was so evenly dispersed, food cooked evenly and quickly and best of all nothing stuck to the bottom of the stainless steel frying pan! This was an unexpected plus.
