The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrast with the Damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen. Handcrafted in Seki, Japan.

Beautiful knife hits well above its price point. I have been owning and using Japanese knives in professional kitchens for the better part of 3 decades and this knife performs as well or better than knives from misono, Masahiro and others and costs far less. It’s also much more user friendly, sharpened on both sides, stainless, and a more traditional shape- if that works for you. At 109 bucks it’s a steal. Get one!. Sean Conroy. Colorado Springs. Miyabi 5000 FCD Gyutoh, 16cm blade. The gyutoh is the chef’s knife of the Japanese kitchen, used as a general-purpose knife for preparing larger cuts of meat and vegetables. The blade core is made of hard fine carbide steel for very good initial sharpness and cutting-edge retention. 48 layers of steel surround the core and make up the Damascus design of the blade. A three-stage grinding, sharpening, and polishing process called Honbazuke honing give the knife a razor-sharp cutting edge. There is no finger guard so the whole length of the cutting edge can be used. The edge is symmetrical (not a single bevel) so can be used by those both left and right-handed. The smooth join between handle and bolster helps to prevent calluses from forming on the thumb and forefinger. For best care, wash by hand, and maintain and sharpen using whetstones. Avoid using glass, ceramic, or stone cutting boards as these will dull the cutting edge.

Very versatile knife with an amazing edge. It’s extremely durable, has a nice weight in my hand, and makes cooking in the kitchen something I look forward to doing more because of this knife alone.. Zsa1. Thu Sep 24 2026
