What You'll Need
An easy crepe recipe calls for ingredients that most kitchens always have on hand, a few simple kitchen tools, and a foolproof crepe maker.
For 8 crepes:
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cups water
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- Mixing Bowl
- Whisk
- Ladle
- Crepe maker
- Measuring Cups
- Spatula
- Strainer
For Foolproof Crepes: Always Use a Crepe Maker
It can be difficult to achieve crepes with the right thinness and browning when using a griddle or large skillet. Crepe makers (also known as crepe pans) are designed to deliver Paris-approved results. Most feature a large nonstick cooking surface and multiple heat levels; some come with must-have accessories like batter spreaders, spatulas, measuring cups, and labels. Best of all, you can use a crepe maker to cook more than just crepes – use it to make flour tortillas, omelets, and even pancakes!
How to Make a Crepe
Step 1
In a large mixing bowl, whisk flour and eggs together. Gradually add milk and water. Stir to combine. Add salt and butter. Whisk until smooth.
Tip: Strain batter through a strainer for an extra-smooth consistency.
Step 2
Heat a lightly-oiled crepe maker to medium-high. Using a small ladle, pour batter (about 1/4 cup per crepe) onto the heated surface, coating it evenly.
Tip: For consistently thin and evenly-browned crepes, choose a crepe maker with a nonstick finish.
Step 3
Cook 1 to 2 minutes, until the crepe's bottom is light brown. Loosen and flip with a spatula and cook for an additional 30 seconds to 1 minute. Serve hot.
Tip: Stacking the crepes helps to keep them warm and moist while you prepare the filling and/or topping.
Crepe Variations
Like pancakes, crepes can be topped or filled with whatever you love:
- Satisfy your sweet tooth by topping the crepes with powdered sugar, fresh fruit, whipped cream, or chocolate hazelnut spread.
- Create a savory appetizer by wrapping crepes around some salmon and sour cream.
- Make a delicious breakfast sandwich by placing ham, cheese, and eggs between two crepes. Or opt for veggie fillings like spinach and mushrooms.
- Eliminate guilt with low-carb crepes: Substitute coconut or almond flour, nut milk, and stevia for the traditional white flour, cow's milk, and sugar.
- Try your hand at the classic Crepes Suzette, which adds orange pieces, orange zest, and Grand Marnier to the basic recipe.
