Healthy Blackberry Smoothie


3/4 cup vanilla almond or soy milk
1 cup kale, baby spinach, or chard leaves (or a combination)
1 ripe banana
1/2 cup blackberries
1/4 cup frozen pineapple


Place the the almond/soy milk, mixed greens, banana, blackberries, and pineapple in a blender in this order. Blend until smooth. Enjoy immediately.

Fresh veggies, including broccoli, carrots, red pepper, eggplant, mushrooms, bok choy, and peas, make this savory noodle dish super healthy.

Pineapple Coconut Energy Bites


1 cup pitted dates
1/2 cup chopped dried pineapple rings
2/3 cups raw sunflower seeds
2/3 cup raw cashews
1/3 cup chia seeds
1/3 cup flaxseed meal
1/3 cup shredded coconut
2-4 tablespoons water
pinch salt


Pulse ingredients in a food processor until the mixture comes together. Initially use only 2 tablespoons of water and add more if needed. Transfer mixture to a large bowl and roll into balls.

Sweet Mint Limeade


1 1/2 large apples (any variety)
1 cucumber
1/2 lime
12 mint leaves


Combine all ingredients in a juicer. Pour juice into a glass or serve over ice.

Mango & Black Bean Salad


1 can black beans, drained and rinsed
2 mangoes, peeled and diced
1-2 ripe avocados, diced
1/2 English cucumber, peeled and diced
1/2 medium red onion, finely diced
handful cilantro, finely chopped
1/2 jalapeno, minced
1 lime, juiced
Salt and pepper to taste


Combine ingredients in a medium-sized bowl. Toss and enjoy!

Kiwi and Pineapple Slushy


6 fresh kiwis, chopped
4 cup seltzer water
3 cups frozen pineapple chunks
2 tablespoons flaxseed meal
1 teaspoon liquid stevia, optional


In a blender add seltzer water followed by kiwis, pineapple, flaxseed meal, and stevia, if using. Blend until all the ingredients are well-blended. Serve immediately.


Note: You can freeze this mixture into popcicles. Kids love this summer treat!

Asian Cucumber and Carrot Slaw


1 large English cucumber
2 medium carrots, peeled
2 tablespoons rice vinegar
1 tablespoon cider vinegar
1 teaspoon water
1/2 teaspoon sugar
1/2 teaspoon sesame oil
1 tablespoon sesame seeds
1/4 cup chopped cilantro


Using a julienne peeler, shred the cucumber and carrots into long strips. Toss veggies in a bowl, with the vinegars, water, sugar, and oil. Top with seeds and cilantro. Chill. Serve cold.

Kiwi Salsa


1 1/2 cups diced kiwi, skin removed
1 mango, diced
1/2 cup diced cucumber
1/2 cup chopped cilantro
2 tablespoons finely chopped jalapeño pepper, seeded and stemmed
1 garlic clove, minced
Juice of 1 lime
Salt and pepper, to taste


In a medium bowl, combine the kiwi, mango, cucumber, cilantro, jalapeño, garlic, and lime juice. Stir and season with salt and pepper to taste.
