Kiwi and Pineapple Slushy
Perfect for beating the summer heat, this refreshing treat is healthy too!

Summer is right around the corner, and my family (kids included) are craving refreshing fruity desserts and drinks. This kiwi and pineapple slushy will satisfy their cravings.
We love slushies, not only because they're quick to put together but because homemade versions are healthier than store bought. Store bought varieties contain loads of sugar and artificial flavors and colors, which we aren't fond of.
For some extra nutrition, I added two tablespoons of flaxseed meal to the slushy. It adds fiber and lowers cholesterol naturally. (The high amounts of soluble fiber in flaxseed meal aids in the lowering of cholesterol.) Liquid stevia is optional, so if you don't have any on hand you can skip this ingredient.
If you want to make a different version of this slushy, I suggest you use fresh fruit that is not previously frozen. Also, make sure you add ice cubes to the blender to give the drink a slushy consistency. A coconut and pineapple slushy using coconut cream is delicious, but you can't go wrong with most combinations of fruit.
If you have any leftover slushy you can freeze the mixture in popsicles molds. They're great for a sweet treat, as they are healthy, refreshing, and delicious. They're a better alternative to store bought popsicles.
Try making slushies with your kids. They would love you for it, and you'll sneak a serving of fruit into their diets!
Kiwi and Pineapple Slushy
Serves: 4
Total time: 5 minutes
6 fresh kiwis, chopped
4 cup seltzer water
3 cups frozen pineapple chunks
2 tablespoons flaxseed meal
1 teaspoon liquid stevia, optional
In a food blender, add seltzer water followed by kiwis, pineapple, flaxseed meal, and stevia, if using. Blend until all the ingredients are well-blended. Serve immediately.
Note : You can freeze this mixture as popsicles for a summer treat. Kids love them!
