Wüsthof engineers developed a new type of technology for sharpening knives called PEtec—an innovative technique that ensures a sharp edge and longer life span. Find out more about this unique sharpening method below.


The Technology


Compared to the standard manual sharpening process, the PEtec technique makes an extremely thin cutting edge for superior sharpness. It also creates a cutting edge that has a high initial cutting performance. Below is a brief step-by-step overview on the sharpening process:
 ​

  • Before sharpening, the blades are measured using lasers.
  • Then, computers calcuate the precise sharpening angle for each knife.
  • As soon as the measurements have been made, precision robots are used to sharpen the blades on a whetstone.



  • For a final touch, the knives are polished using a special disc.
