Peppermint Chocolate Cookies
It's easy to get in the holiday spirit with these seasonal treats.

When chocolate and peppermint come together it's like the holidays magically appear. Hot cocoa and candy canes or white chocolate peppermint mochas bring to life the most wonderful time of year. I've brought the holiday flavor pairing together into one delicious cookie that's sure to be a hit at holiday cookie exchanges or when given as a yummy gift!
Peppermint Chocolate Cookies
Makes 4 dozen
2 sticks of butter (1 cup)
1/2 cup peppermint bits
1/4 teaspoon salt
2 cups white chocolate chips
1 1/2 cups sugar
3/4 teaspoon baking soda
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa
2 eggs
Preheat oven to 350 degrees F.

In a small bowl, mix together the salt, flour, cocoa, and baking soda. Set aside. In a large mixing bowl, mix together the liquid ingredients: butter, eggs, sugar, and vanilla. Mix until
light and fluffy. Slowly add flour mixture to the liquid ingredients and blend.
Next, mix in white chocolate chips and peppermint bits. Using a cookie scoop or teaspoon, drop the dough onto a greased cookie sheet. Bake approximately 10 minutes. Let cool and then transfer to a wire rack.
