I have a confession to make: my favorite food in the world is chips and dip.
I know. It's not the healthiest thing, but I can't help it. I have been known to eat chips and dip for lunch. Like, not on the side of a sandwich, but my entire lunch is chips and dip. I realize this is completely horrifying, especially since I am now on a mission to eat healthier, but there you have it. A girl likes what a girl likes.
Even better than a plain old dip is a rich, creamy, melty, cheesy dip. And even better than that is a slow cooker dip—just toss everything on in there and forget about it.
Which is why I absolutely love this cheesy slow cooker artichoke dip. It's so creamy and cheesy and amazing, and it literally takes about two minutes to prepare, if that. You literally throw all of the ingredients into your slow cooker, give it a stir, set it on low for about two to two and a half hours, grab your tortilla chips, and go to town.
I love how melty the cheese gets, and the Miracle Whip and Greek yogurt give it an amazing tangy taste. It is absolutely perfect for parties and tailgates—or, if you're like me, you know... lunch.
Cheesy Slow Cooker Artichoke Dip
Serves 8-10
2 cans (14 ounces) artichoke hearts, drained1/2 cup mayonnaise
3/4 cup Miracle Whip
1/4 cup plain Greek yogurt
1 1/2 cups mozzarella cheese
1 cup shredded parmesan cheese
Chop artichoke hearts into small pieces.
Spray your slow cooker with non-stick spray. Add all ingredients to the slow cooker bowl and stir to combine.
Cook on high for approximately 2 hours or on low for 3-4 hours, stirring occasionally, or until everything is melted and heated through. Keep warm and serve with tortilla chips or crackers.
