Beef Black Bean Jalapeno Chili
You can make this beef black bean jalapeno chili up to three days ahead (do try to make it at least one day ahead to allow the flavors to meld), and keep it in the fridge. It can also be frozen for up to three months in airtight containers.

Bean and Sausage Casserole
As you can see from the photo I added eggs to this bean and sausage casserole, but you don't have to. I gathered inspiration from about three popular Spanish dishes and then merged them. I soak an entire bag of butter beans for this recipe, but you can easily substitute canned beans. When you cook your own beans, though, you can add tons of flavor.

Broccoli cheese soup
My very good friend asked me to recreate a broccoli and cheese soup from one of her favourite restaurants. I made my version healthy and delicious! Feel free to add a pinch or two of cayenne for a little kick and remember to shave off the tough outer skin of the broccoli stalks when you cube them!

Scotch Broth
If you haven't had Scotch broth, think of it as Scotland's chicken noodle soup. It has many similarities, featuring good chicken stock, onion, carrot, and celery but instead of noodles it uses barley, a grain that's common in Scotland. It takes a bit longer to cook, but you just leave the soup to simmer away in your stock pot and the barley cooks and takes in the delicious stock flavor. It has a wonderful nuttiness to it that adds to the comfort factor of the whole dish.

Spaghetti with Roasted Cherry Tomatoes, Kalamata Olives & Basil
This recipe is super easy and perfect for a light weeknight dinner! You can roast any fresh tomato; sweet grape or cherry tomatoes are usually available year-round. When Roma tomatoes are in season, they are great because they are meaty and have less moisture. Adjust the spiciness of the sauce by adding more or less red pepper flakes. The key to perfect pasta is cooking it al dente in a soup pot full of water and lots of salt. Top it with fresh shavings of parmesan cheese.

Hot and sour soup is one of my favorite take-out foods, so when I figured out how to make it at home, I was ecstatic! You can make it in one stock pot in under 20 minutes. It is one of the most requested meals in my house and even got me to start eating mushrooms! Healthy, comforting, and easy, what more could you want?
