I never thought professional cookware makes a big difference. The conduction of heat surrounding the whole pan. I've looked for a sautee pan for a very long time. They're more common in Middle Eastern cooking and I just couldn't find the right stuff. While this braiser pan isn't officially a satuee pan, it does the work beautifully. The food comes out cooked evenly and I can use my metal utensils with no fear.
