I also want to note that the elastic isn't just around the bottom at corners, it's around the entire bottom which will make it easier to stay put - this must be their OptiFit band. The rectangular shape of this pan was inspired by the Japanese makiyakinabe pans that are used for rolled omelets called tamagoyaki. The rectangular omelet can be filled and rolled evenly and then cut into slices with an identical diameter. These sheets say they are organic and are labeled correctly. I like them and washed them once but they do seem kinda thin and alittle stiff. THey say they get softer with every wash.
