I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. The rectangular omelet can be filled and rolled evenly and then cut into slices with an identical diameter. A similar process is used for the Korean dish gyeran-mari.Apart from these traditional uses, the STAUB Egg Roll Pan is also a great tool to bake crêpes or pancakes, leading to the same advantages of even filling and rolling – and surprising your guests with a novel form of the beloved dish.This Egg Roll Pan measures 6*8 in, resulting in an egg roll that serves at least two people for breakfast or as an addition to their bento boxes. The high sides allow for big rolls with a lot of delicious filling. The enameled cast iron of the pan distributes heat evenly, which results in consistent coloration of the omelet or pancake: golden as traditional in Japan, or a light brown like a Breton galette.
