Unlike other pans I’ve used, this one has a very uniform temperature, which is essential for consistent cooking. Crispy gyozas: I love making gyozas in this pan. Because of the even heat, they come out incredibly crispy every single time, which was always a struggle with my older, non-uniform pans. Durability: The pan feels very heavy-duty and resistant.
